Peewiglet > Well, first you need to choose your fruit, scrub it and then simmer it for an awfully long time :)
Peewiglet > After all that simmering, fish it out.
Peewiglet > Then you need to cut each fruit in half, return the juice and flesh to the pan of simmering fluid and cut the peel up. It can be fine or chunky, according to your preference. Guess what mine was?
Peewiglet > After that the rind goes back into the correct quantity of simmering fluid (either reduced or made up, in order to make sure you have the right amount). Add freshly squeezed lemon juice and sugar, and bring to the boil.
Peewiglet > Once at a rolling boil, continue until setting point has been achieved. 10-15 minutes the recipe said, but it took mine more like 40 minutes. I think perhaps I started with a little too much liquid.
Peewiglet > Meanwhile, be sterilising your carefully washed and rinsed jars in the oven.
Peewiglet > Finally, decant into pots and let them cool down before adding labels.

Look at all that! I can hardly believe I've made it. It tastes great too, btw :)

(The semi-filled jar on the right contains what was left when I'd filled my other jars. I'm going to put it in the fridge and eat it quickly. The others will be either saved or passed out as prezzies to long-suffering friends and family.)
